Snow peas are a perfect accompaniment to stir-fry dishes and salads. Served crisp and sweet, they are irresistible. It is important to choose snow peas carefully to ensure that they will remain green and crisp during cooking. This article provides some pointers on what to look for when selecting snow peas.

Steps

  1. Purchase snow peas that have a fresh, green top. The green should be bright and the seeds very small and flat.[1]
  2. Test them for the "snap" factor. Good snow peas should snap when broken in half.
  3. Check the length. The ideal length for a snow pea is approximately 7.5cm/3" in length and about 2cm/3/4" across.[2]
  4. Look for smooth, unbroken skin. Avoid snow peas with wilted, discoloured or shrivelled parts.
  5. Wash snow peas prior to storage. Allow them to dry on a wire rack and place in a paper bag for storage.
  6. Store in the vegetable crisper in the refrigerator. Kept this way, they should last for up to three weeks.

Tips

  • Avoid storing snow peas in plastic bags. Plastic bags make snow peas sweat and this encourages the growth of mould. Even if that doesn't occur, they will quickly lose their crispness.
  • If you do leave them in plastic, be sure to use within 3 days and perforate the bag.[3]
  • Snow peas are also known as mange tout.
